This is a delicate oil with a low intensity of bitterness and pungency, but with high fruitiness that makes it very well balanced. Good delicate oils are hard to make. This is a really good one with a nice strong floral aroma and taste with both ripe and green olive characteristics. The lasting flavour is of tropical sweetness, leafy vegetable greens, and cinnamon.

This is a great, fresh, early-harvest Arbequina oil that has a lot of the classic ripe, nutty, and buttery fruit flavours, but also has some green herbaceousness, quite a bit of bitterness, and a lot of pungency. It is very complex with a nice floral aroma, many ripe and green flavours and it finishes with a black pepper kick.

This is medium intensity, early harvest Leccino that has a typical cinnamon-herbal flavor characteristic of the variety. The bitterness and pungency are moderate and very nicely balanced with the fruitiness intensity. It is quite complex in having both green and ripe flavours of nutty, buttery, apple, floral, fresh cut grass, mint and of course cinnamon. It has a nice, clean, fresh zing.

This is a fantastic Coratina oil that is quite bold, well balanced, and not overly aggressive for a robust style oil of this variety. It is quite aromatic with a wonderful herbal and floral bouquet. The fruitiness is very high, which matches the strong pungency and medium bitterness. It is very complex with mostly green fruitiness that is dominated by a deep herbaceous spiciness, mint, and cinnamon undertones.
