Traditional Balsamic Vinegar Aged Up To 18 Years

Our finest grade of aged balsamic condimento from Modena, Italy is produced in the traditional style. It is aged using the Solera System for up to 18 years in chestnut,
oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent Condimento is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.

 

Organic Traditional Balsamic Vinegar Aged Up To 12 Years

Produced from organically grown grapes in Modena, Italy, this zippy, bright balsamic vinegar is free of artificial or chemical fertilizers. This vinegar is extremely versatile with an extra touch of tartness.

 

Neapolitan Herb

Zesty and versatile, our Neapolitan Herb balsamic has just the right amount of acidity to shine in a multitude of culinary applications, especially where a savoury characteristic is desired. Made from traditional herbs long used in Neapolitan cuisine including rosemary, marjoram, thyme, garlic and sage, it will bring your salad dressing, marinade or barbecue sauce to the next level. Try it with pork, beef, creamy cheeses or even use it to spike a Caesar. Pairs great with our Lemon, Garlic, Rosemary, Lime or Tuscan Herb olive oils.

Espresso

This aged balsamic vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee. It makes a fantastic glaze or bar-b-que base for pork, beef or chicken. Add a shot to an “affogatto float”, which calls for a tall mug of vanilla gelato scoops covered with coffee.

 

Blackberry Ginger

Our Blackberry-Ginger Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of ginger. It makes a fantastic dressing or marinade and is divine paired with our Persian Lime Olive Oil.

 

Dark Chocolate

This Dark Chocolate Balsamic Vinegar is rich, thick and resounds with the complexity of three different chocolates responsible for the depth of its flavor. Drizzle over vanilla gelato, mix with fresh berries or add zing to your chicken mole sauce.

 

Cinnamon Pear

This delightful vinegar is spicy and warm, perfect drizzled over fresh fruit or as a dessert topping. Notes: It has the unique taste of d’anjou pear, and it matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing.

 

Tangerine

This flavored balsalmic vinegar is made with whole fruit tangerine essence added. The tart, versatile flavor makes this a customer favorite.

Strawberry

Both sour and tart, our Strawberry Balsamic Vinegar is the result of adding natural essence of strawberry to our balsamic. Use as a vinegar, or try as a condiment on dessert dishes such as fruit medley’s or super premium vanilla ice cream.

 

Pomegranate

The intense sweet-tart flavor of the pomegranate is a perfect match for hearty meats like lamb and duck. Raspberry

This thick, rich, perfectly balanced Balsamic Vinegar, oozes with the natural flavor of fresh, ripe raspberries. Maple

This is the first of its kind – an aged Maple Balsamic, using real 100% pure maple produced at a small family farm
in Vermont. This balsamic is outrageously good. Think pancakes, waffles, glazing bacon, pork chops, ice cream, dressings, marinades, chocolate, cake, fruit, and on, and on. It pairs insanely well with our organic butter extra virgin olive oil, California toasted almond oil, French Walnut oil, blood orange fused (agrumato) olive oil & any one of the superlative unflavored extra virgin olive oils in our collection.

 

Red Apple

This balsamic has an enticing aroma and a delicate, sweet apple flavor, fruitier than most balsamic vinegars. It’s a wonderful way of adding aroma and taste to compliment any dish. It adds a refreshing lift to salads, sauces, chutney’s and vegetables. It is amazing drizzled on pork, chicken or fish. Mix equally with our French Roasted Walnut Oil and shake well for a knock-out vinaigrette dressing.

 

Wild Blueberry

Our luscious Wild Blueberry Balsamic Vinegar is just as amazing as over garden salad as it is over fuit salad. When paired with delicate extra virgin olive oil such as Arbequina, the intense blueberry flavour will shine. Also fantastic with our Blood Orange or Lemon fused olive oils. Pairs well with Feta and Blue cheeses.

 

Lavender

Floral, sweet and slightly herbaceous, our Lavender Balsamic captures the essence of this ancient flower. Pair with chicken, use in vinaigrettes, over ice cream and with fresh fruits and berries.

 

Black Currant

Balsamic condimento is naturally flavored with floral, sweet, black currant in this rich, unique balsamic condimento. Great for any salad dressing or drizzled over any sharp cheese.

White Balsamic Vinegars

Premium White Balsamic

Made with White Trebbiano Grape Must, our White Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena however it is not carmelized. The result is a crisp, tart vinegar with a touch of sweetness. Extremely adaptable, it can be used with any EVOO, as well as with our flavoured oils. This is a tart Balsamic Vinegar with a residual grape flavour and 6% acidity.

 

Blenheim Apricot

The Blenheim variety is both sweet and tart with an intensely aromatic aroma of honeysuckle and picked
with a faint green tinge. We’ve married this with our aged white balsamic condimento. The resulting collaboration
is intoxicating as it is crisp and tart. Great with grilled chicken, as a glaze or served with cheese. Pairs fantastically with Roasted Almond Oil or Portuguese Picual EVOO!

 

Gravenstein Apple

The Gravenstein Apple is a hard to find varietal due to the difficulty farmers have cultivating it. In California, it’s grown in pockets up the coast and is highly prized for it’s heady ambrosia perfume, and crisp, sweet-tart cream coloured flesh. This white balsamic shines when paired with our Persian Lime, Limonato and Blood Orange fused olive oils. To add a savoury contrast, try it with our Herb de Provence, Tuscan Herb, or Gremolata infused olive oils. Enjoy dressings and marinades or simply drizzle over fresh melon or berries.

 

Lemongrass Mint

Our Thai Lemon Grass-Mint White Balsamic Condimento is tart, crisp, clean and absolutely delicious. The natural flavours of Thai lemon grass and mint cooperate beautifully and make a dazzling base for marinades, dressings. For a taste explosion, add diced fresh, hot Thai chilies and cilantro. Use this Asian inspired marinade to dress your seafood salad, noodles or use for a dipping sauce. Try mixed with rum for an out of this world mojito. Pairs great with our Basil, Lime or Cilantro & Roasted Onion olive oils.

 

Cara Cara Orange & Vanilla

This all natural confectionery white balsamic condimento is made from authentic White balsamic aged for up to 12 years in Modena, Italy. Creamy, sultry, pure Madagascar Vanilla and the bright citrus of Cara Cara Oranges combine to delight the senses. Pair with fine chocolate, drizzle over fruit salad, in sparkling Water, mixed drinks, or over yogurt and Vanilla ice cream. It pairs Well with the fruity notes typically found in Ultra Premium Koroneiki Extra Virgin Olive Oil, and is also excellent blended with the Organic, All Natural Butter Olive Oil. Use this complex heart healthy combination over oatmeal, cooked whole grain cereal, pancakes, or in salads.

 

Alfoos Mango

Our Alfoos Mango White Balsamic Condimento pairs exquisitely with our Persian Lime Olive Oil. Also fantastic with shrimp, scallops, salad and in salsas for a tropical, sweet-tart twist! The Alfoos mango cultivar is considered by many to be one of the best in terms of sweetness, richness and flavour.

 

Cranberry Pear

This White Balsamic is clean, crisp and very tart and boasts a lovely deep, rose blush. It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress fruit or vegetable salads, as a marinade, a glaze for poultry, with gelatin for a delicious fruit aspic or even in a mixed drink!

 

Honey Ginger

Honey and ginger plays well together and bring a
gentle, spicy heat, which balances perfectly with the moderate, natural acidity of our white balsamic vinegar. This condiment is superlative when paired with our Persian Lime Extra Virgin Olive Oil and positively shines with our Japanese Toasted Sesame Oil! Mix an amazing marinade with the vinegar, toasted sesame oil, our Garlic Extra Virgin Olive Oil and soy sauce.

 

Grapefruit

Our grapefruit white balsamic sparkles with crisp, clean citrus flavor. It has a perfect balance of acidity and natural sweetness. Try this amazing balsamic in dressings, paired with fennel. It makes a show-stopping white balsamic grapefruit granita.

 

Oregano

Ripe Peach

Made with White Trebbiano Grape Must, our White Peach Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. Extremely adaptable, it can be paired with any of our extra virgin olive oils, as well as our flavored oils to make a light, tart vinaigrette.

 

Sicilian Lemon

Playfully tart and pleasantly sweet, our Sicilian Lemon White Balsamic has a perfectly balance acidity and a crisp, lemon flavor and aroma. Fabulous with seafood, in dressings or in mixed drinks. Pairs well with Roasted Sesame Oil for a fantastic salad dressing or marinade!

 

Jalapeño 

Sweet, spicy and tart, like you would expect from this chili-infused condiment. Use this to light up your marinades, splash in a ceviche, spice up a salsa or blend into dressings to top fruits.

 

 Pomegranate-Quince

This all natural, ruby jewel-toned White balsamic owes its tart, crisp flavor to juicy California Grenada Pomegranates and Floral Winter Quince. It’s made from authentic white balsamic condimento, aged for up to 12 years in Modena, Italy. It pairs beautifully with our Blood Orange Agrumato Olive Oil, Persian Lime Olive Oil, and fruitier extra virgin olive oils such as Hojiblanca, and Picual.
